Ingredients
  

2 whole white fish (such as snapper or bass), cleaned and scaled

2 lemons, sliced

1 orange, sliced

1 cup cherry tomatoes, halved

1/2 cup Kalamata olives, pitted and halved

4 cloves garlic, minced

1/4 cup fresh parsley, chopped

1/4 cup extra-virgin olive oil

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat your oven to 400°F (200°C).

    Pat the whole fish dry with paper towels and place them on a large baking sheet lined with parchment paper.

      In a small bowl, combine the minced garlic, olive oil, oregano, salt, and black pepper. Mix well to create a marinade.

        Rub the marinade all over the fish, making sure to get it into the cavity and on the skin.

          Stuff each fish's cavity with lemon and orange slices, adding a few pieces of parsley inside as well.

            Scatter the halved cherry tomatoes and Kalamata olives around the fish on the baking sheet. Drizzle any remaining marinade over the veggies.

              Bake in the preheated oven for about 25-30 minutes, or until the fish is cooked through and flakes easily with a fork.

                Carefully remove the fish from the oven and let it rest for a couple of minutes before serving.

                  Garnish with fresh basil leaves and extra parsley if desired before serving.
