2 boneless, skinless chicken breasts

1 tablespoon olive oil

Salt and pepper, to taste

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1 cup heavy cream

1 cup low-sodium chicken broth

8 ounces cheese-filled tortellini (fresh or frozen)

1 cup baby spinach

1 cup grated Parmesan cheese

Fresh basil, for garnish

Instructions
 

Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with salt and pepper. Add them to the skillet and cook for 5-7 minutes on each side, or until golden brown and cooked through. Remove chicken from the skillet and let it rest before slicing.

    Make the Sauce: In the same skillet, add the minced garlic and sauté until fragrant (about 30 seconds). Add the halved cherry tomatoes and dried Italian herbs, cooking until the tomatoes soften, about 3-4 minutes.

      Creamy Mixture: Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a gentle simmer and allow it to reduce slightly, about 5 minutes.

        Cook Tortellini: Add the tortellini to the skillet, stirring well to coat in the sauce. Cook for another 4-6 minutes (or according to package directions) until the tortellini is tender.

          Add Spinach and Cheese: Stir in the baby spinach and grated Parmesan cheese, allowing the spinach to wilt and cheese to melt, about 2-3 minutes.

            Combine Chicken and Sauce: Slice the rested chicken and add it back into the skillet, stirring gently to combine all ingredients.

              Garnish and Serve: Remove from heat, garnish with freshly chopped basil, and serve immediately with extra Parmesan cheese on the side.
