Ingredients

2 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 teaspoon red pepper flakes (adjust to taste)

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

8 oz fettuccine or penne pasta

2 cups fresh spinach

Fresh basil for garnish

Extra Parmesan for serving

Instructions

Prepare Pasta: Begin by boiling a large pot of salted water. Cook the fettuccine or penne according to package instructions until al dente. Drain and set aside, reserving a bit of the pasta water.

Season Chicken: While the pasta cooks, season both sides of the chicken breasts generously with salt and pepper.

Cook Chicken: In a large skillet over medium heat, add the olive oil. Once hot, add the chicken breasts. Cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and let it rest.

Sauté Garlic and Tomatoes: In the same skillet, add the minced garlic and cook until fragrant, about 30 seconds. Then, add the halved cherry tomatoes and red pepper flakes, cooking until the tomatoes start to blister (about 3-4 minutes).

Make Sauce: Pour in the heavy cream and chicken broth, stirring to combine. Let the mixture simmer and reduce for about 5 minutes. Stir in the grated Parmesan cheese until melted and creamy.

Add Spinach: Toss in the fresh spinach and let it wilt into the sauce, mixing everything well.

Combine Pasta: Slice the cooked chicken into strips, then add the cooked pasta to the skillet along with the chicken. Toss to coat everything in the rich sauce, adding a splash of reserved pasta water if needed to loosen the sauce.

Serve: Serve the creamy pasta hot, garnished with fresh basil and additional Parmesan cheese, if desired.
