Ingredients

2 boneless, skinless chicken breasts

300g fusilli pasta

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon dried Italian herbs

1 teaspoon red pepper flakes (adjust for heat preference)

1 cup sun-dried tomatoes, chopped (in oil)

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup fresh spinach

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions

Prepare the Chicken: Season the chicken breasts with salt, pepper, and dried Italian herbs on both sides.

Cook the Pasta: In a large pot, bring salted water to a boil. Add fusilli pasta and cook according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.

Sear the Chicken: In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove from the skillet and let rest for a few minutes before slicing.

Make the Sauce: In the same skillet, add minced garlic and red pepper flakes. Sauté for about 1 minute until fragrant. Stir in the sun-dried tomatoes and cook for an additional 2 minutes.

Creamy Base: Pour in the heavy cream and bring to a gentle simmer. Add the grated Parmesan cheese, stirring until melted and the sauce is creamy. If the sauce is too thick, add reserved pasta water a little at a time to achieve desired consistency.

Combine: Toss in the cooked pasta, spinach, and sliced chicken. Mix until everything is well coated in the creamy sauce. Adjust seasoning with more salt and pepper if needed.

Serve: Transfer the pasta to serving plates and garnish with fresh basil leaves.
