Ingredients
  

4 boneless, skinless chicken thighs

Salt and freshly ground black pepper, to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1/2 teaspoon red pepper flakes (optional)

2 cups chicken broth

1 1/2 cups orzo pasta

1 cup cherry tomatoes, halved

1 cup baby spinach

1/2 cup grated Parmesan cheese

2 tablespoons fresh basil, chopped

Juice of 1 lemon

Instructions
 

Season the Chicken: Pat the chicken thighs dry with paper towels and season both sides with salt and pepper.

    Sear the Chicken: In a large skillet or sauté pan over medium-high heat, warm the olive oil. Once hot, add the chicken thighs and sear until browned, about 5-6 minutes per side. Remove the chicken from the pan and set aside.

      Sauté Aromatics: In the same pan, add the minced garlic, dried oregano, dried thyme, and red pepper flakes. Sauté for about 1-2 minutes, until fragrant.

        Cook Orzo: Add the chicken broth and orzo to the pan, stirring to combine. Bring to a simmer.

          Combine and Simmer: Return the chicken to the pan, nestling it in the orzo. Add the cherry tomatoes. Cover the skillet and let it simmer over low heat for 10-12 minutes, until the orzo is al dente and has absorbed most of the liquid.

            Add Spinach and Cheese: Uncover the skillet and add the baby spinach and grated Parmesan cheese. Stir until the spinach wilts and the cheese melts into the pasta. Squeeze fresh lemon juice on top before serving.

              Garnish and Serve: Sprinkle with chopped fresh basil and additional Parmesan cheese if desired. Serve warm, enjoying the delightful harmony of flavors!
