Ingredients

4 boneless, skinless chicken breasts

1 tablespoon olive oil

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1 teaspoon onion powder

½ teaspoon red pepper flakes (adjust for spice preference)

Salt and pepper to taste

1 cup heavy cream

1 cup sun-dried tomatoes, chopped

1 cup baby spinach

½ cup grated Parmesan cheese

Fresh basil leaves for garnish

Instructions

Start by seasoning the chicken breasts on both sides with salt, pepper, oregano, basil, onion powder, and red pepper flakes.

In a large skillet over medium heat, heat the olive oil. Once hot, add the seasoned chicken and sear each side for about 5-7 minutes, or until the chicken is golden brown and fully cooked. Remove from the skillet and set aside.

In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant, making sure not to burn it.

Pour in the heavy cream and bring it to a gentle simmer. Stir in the sun-dried tomatoes and allow it to thicken slightly for about 2-3 minutes.

Add the baby spinach to the cream sauce and cook until wilted, about 2 minutes. Incorporate the grated Parmesan cheese and mix until melted and the sauce is creamy.

Return the cooked chicken to the skillet, nestling it into the sauce. Spoon the sauce over the chicken and let it simmer together for another 2-3 minutes to meld the flavors.

Taste and adjust seasoning if necessary.

Serve hot, garnished with fresh basil leaves for a touch of color and herbal flavor.
