Ingredients
  

4 chicken thighs (bone-in, skin-on for extra flavor)

1/4 cup fresh lime juice

1/4 cup orange juice

3 cloves garlic, minced

1 tablespoon fresh thyme, chopped

1 tablespoon fresh parsley, chopped

1 tablespoon soy sauce (or coconut aminos for gluten-free)

1 teaspoon paprika

1 teaspoon ground cumin

1/2 teaspoon ground black pepper

1/2 teaspoon salt

1/2 teaspoon cayenne pepper (adjust for spice preference)

2 tablespoons olive oil

Instructions
 

In a medium bowl, whisk together the lime juice, orange juice, minced garlic, thyme, parsley, soy sauce, paprika, cumin, black pepper, salt, and cayenne pepper until well combined.

    Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure it is well coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, ideally overnight for maximum flavor.

      When ready to cook, preheat your oven to 425°F (220°C).

        Remove the chicken from the marinade and let it come to room temperature for about 15 minutes. Discard the marinade.

          In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the chicken thighs skin-side down. Sear for about 5-7 minutes until the skin is crispy and golden brown.

            Carefully flip the chicken thighs and transfer the skillet to the preheated oven. Bake for 25-30 minutes, or until the internal temperature reads 165°F (74°C) and the juices run clear.

              Remove the skillet from the oven and let the chicken rest for about 5 minutes before serving.
