For the Pumpkin Spice Dough:

1 cup pumpkin puree (canned or homemade)

1/2 cup warm milk (105°F to 110°F)

1/4 cup granulated sugar

1/4 cup unsalted butter, melted

1 large egg

1 teaspoon vanilla extract

3 1/2 to 4 cups all-purpose flour

2 1/4 teaspoons (1 packet) active dry yeast

1 teaspoon ground cinnamon

1 teaspoon ground ginger

1/2 teaspoon ground nutmeg

1/2 teaspoon allspice

1/2 teaspoon salt

For the Filling:

1/2 cup brown sugar, packed

2 teaspoons ground cinnamon

1/4 teaspoon ground nutmeg

1/4 cup unsalted butter, softened

For the Maple Glaze:

1 cup powdered sugar

1/4 cup pure maple syrup

1-2 tablespoons milk (as needed for consistency)

1/2 teaspoon vanilla extract

Pinch of salt

Instructions
 

Prepare the Dough:

    - In a large mixing bowl, combine warm milk, sugar, and yeast. Let it sit for about 5-10 minutes until foamy.

      - Add in the pumpkin puree, melted butter, egg, and vanilla extract, stirring until well combined.

        - In another bowl, whisk together 3 1/2 cups of flour, cinnamon, ginger, nutmeg, allspice, and salt. Gradually fold the dry ingredients into the wet ingredients until a soft dough forms. If the dough is too sticky, add more flour, 1 tablespoon at a time, until manageable.

          Knead the Dough:

            - Turn the dough onto a lightly floured surface and knead for about 5-8 minutes until it’s smooth and elastic. Form the dough into a ball and place it in a greased bowl. Cover with a clean cloth or plastic wrap and let it rise in a warm place until doubled in size, about 1-1.5 hours.

              Make the Filling:

                - In a small bowl, mix together brown sugar, cinnamon, and nutmeg. Set aside.

                  Roll Out the Dough:

                    - Once the dough has risen, punch it down and turn it out onto a floured surface. Roll it out into a rectangle (about 16x12 inches) with a thickness of about 1/4 inch.

                      Add Filling & Roll:

                        - Spread the softened butter over the rolled dough, then sprinkle the sugar and spice mixture evenly on top. Starting from one long edge, roll the dough tightly into a log. Pinch the seam to seal.

                          Slice and Second Rise:

                            - Cut the roll into 12 equal pieces and place them in a greased 9x13 inch baking dish. Cover with a cloth and let rise in a warm place for another 30 minutes until they puff slightly.

                              Bake the Rolls:

                                - Preheat the oven to 350°F (175°C). Bake the rolls for 25-30 minutes until they are golden brown and cooked through. Remove from the oven and let cool slightly.

                                  Prepare Maple Glaze:

                                    - In a medium bowl, whisk together powdered sugar, maple syrup, 1 tablespoon of milk, vanilla extract, and a pinch of salt until smooth. If too thick, add more milk one teaspoon at a time until the desired consistency is reached.

                                      Glaze the Rolls:

                                        - Drizzle the warm maple glaze over the rolls while they are still warm. Let it set for a few minutes, then serve warm.
