4 medium sweet potatoes, peeled and cubed

3 tablespoons olive oil

2 tablespoons pure maple syrup

1 tablespoon chipotle powder

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

Fresh cilantro, chopped (for garnish)

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large mixing bowl, combine the olive oil, maple syrup, chipotle powder, garlic powder, smoked paprika, salt, and black pepper. Whisk until well combined.

      Add the cubed sweet potatoes to the bowl and toss them in the marinade until they are evenly coated.

        Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper.

          Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the sweet potatoes are tender and caramelized on the edges.

            Once done, remove from the oven and let cool for a few minutes.

              Transfer to a serving dish and garnish with chopped fresh cilantro.
