Maple Bacon Butternut Squash

1 medium butternut squash, peeled and diced

6 strips of thick-cut bacon, chopped

1/4 cup pure maple syrup

1 teaspoon cinnamon

1/2 teaspoon nutmeg

Salt and pepper to taste

2 tablespoons olive oil

Fresh chopped parsley for garnish (optional)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large bowl, combine diced butternut squash with olive oil, salt, pepper, cinnamon, and nutmeg. Toss until the squash is evenly coated.

      Spread the seasoned squash evenly on a parchment-lined baking sheet.

        In a skillet over medium heat, cook the chopped bacon until crispy. Use a slotted spoon to remove the bacon and transfer it to a plate lined with paper towels to drain excess fat.

          Reserve about 1 tablespoon of the bacon drippings in the skillet. Add the maple syrup to the skillet and warm it over low heat for about 1-2 minutes.

            Pour the maple syrup mixture over the seasoned butternut squash on the baking sheet, tossing gently to combine.

              Bake in the preheated oven for 25-30 minutes, or until the squash is tender and caramelized, stirring halfway through.

                In the last 5 minutes of baking, sprinkle the crispy bacon over the squash and return to the oven.

                  Once done, remove from the oven and let cool slightly. Garnish with fresh parsley if desired before serving.
