1 cup canned pumpkin puree

1 cup mandarin orange segments (fresh or canned)

1/2 cup oats (rolled or quick)

1/2 cup almond flour

1/4 cup honey or maple syrup

1 tsp pumpkin spice (or a mix of cinnamon, nutmeg, ginger)

1/2 tsp vanilla extract

1/4 tsp salt

1/2 cup dark chocolate chips (optional)

Almond slivers for garnish (optional)

Prepare Your Ingredients: If using canned mandarin oranges, drain them and pat dry with a paper towel to prevent excess moisture. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix the Wet Ingredients: In a large mixing bowl, combine the canned pumpkin puree, honey (or maple syrup), vanilla extract, and pumpkin spice. Stir until smooth and well combined.

      Combine Dry Ingredients: In another bowl, mix the oats, almond flour, and salt. Gradually add this dry mixture into the wet mixture, stirring until fully incorporated. The mixture should hold together but still be a bit sticky.

        Add Mandarin Oranges: Gently fold in the mandarin orange segments. If using, mix in the dark chocolate chips for added richness.

          Shape the Treats: Using your hands or a cookie scoop, form small balls or pumpkins (around 1-2 inches in diameter). Place them on the prepared baking sheet, leaving space between each treat.

            Garnish: Optionally, press a few almond slivers into the top of each pumpkin treat for a decorative touch.

              Bake: Put the treats in the preheated oven and bake for 15-20 minutes, or until they are golden on the edges. The centers may still be slightly soft but will firm up as they cool.
