Mac & Cheese Beef Burrito

2 cups elbow macaroni

1 lb ground beef

1 cup sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1/2 cup cream cheese

1/2 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

4 large flour tortillas

1/2 cup diced tomatoes (optional)

1/2 cup sour cream (for serving)

Chopped green onions (for garnish)

Cook the Macaroni: Bring a pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Brown the Beef: In a large skillet over medium heat, brown the ground beef, breaking it apart as it cooks. Season with garlic powder, onion powder, paprika, salt, and pepper. Cook until fully browned, about 5-7 minutes.

      Prepare the Cheese Sauce: In a separate saucepan, combine the cream cheese, milk, and half of each cheese (cheddar and mozzarella). Heat over low to medium heat while stirring until the cheeses melt into a smooth sauce. Add the cooked macaroni to the cheese sauce and stir until well combined.

        Assemble the Burrito: Lay out the flour tortillas flat. Evenly distribute the beef mixture and mac & cheese onto each tortilla. Sprinkle with diced tomatoes if desired. Fold the sides of the tortilla over the filling, then roll from the bottom to create a burrito shape.

          Grill the Burrito: In a clean skillet over medium heat, place the burritos seam side down. Cook for about 2-3 minutes on each side until golden brown and crispy. Optionally, you can sprinkle the tops with remaining cheese and cover briefly to melt before removing.

            Serve: Slice the burritos in half and serve with sour cream and a sprinkle of chopped green onions for garnish.
