1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 cups cream cheese, softened

1 cup granulated sugar

3 large eggs

1 teaspoon vanilla extract

Zest of 1 lemon

Zest of 1 lime

½ cup fresh lemon juice

½ cup fresh lime juice

1 cup cherries, pitted and halved

½ cup pistachios, chopped (plus extra for garnish)

1 cup sour cream

2 tablespoons powdered sugar

Prepare the Crust: Preheat your oven to 325°F (163°C). In a mixing bowl, combine the graham cracker crumbs and melted butter until it resembles wet sand. Press the mixture into the bottom and slightly up the sides of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and allow to cool.

    Make the Filling: In a large mixing bowl, beat the softened cream cheese with the granulated sugar until smooth and creamy, about 2-3 minutes. Add the eggs one at a time, mixing well after each addition. Then, add the vanilla extract, lemon zest, lime zest, lemon juice, and lime juice. Beat until just combined.

      Incorporate Cherries and Pistachios: Gently fold in the pitted and halved cherries and chopped pistachios into the cream cheese mixture. Be careful not to break the cherries too much.

        Fill the Crust: Pour the cheesecake filling over the cooled crust, smoothing the top with a spatula.

          Bake the Cheesecake: Bake the cheesecake in the preheated oven for about 55-65 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and leave the cheesecake inside for another hour with the door slightly ajar, this helps to prevent cracking.
