1 pound baby carrots, peeled

2 tablespoons unsalted butter

3 tablespoons honey

Zest and juice of 1 lemon

1 teaspoon ground cinnamon

Salt and pepper to taste

Fresh parsley for garnish

Instructions
 

Begin by preheating your oven to 400°F (200°C).

    In a large mixing bowl, combine the baby carrots with melted butter, honey, lemon juice, lemon zest, ground cinnamon, salt, and pepper. Toss until the carrots are evenly coated with the mixture.

      Place the coated carrots in a single layer on a baking sheet.

        Roast the carrots in the oven for about 25-30 minutes, or until they are tender and caramelized, stirring halfway through for even cooking.

          Once the carrots are done, remove them from the oven and let them cool for a couple of minutes.

            Transfer the carrots to a serving dish and sprinkle with fresh parsley for a pop of color.
