Ingredients
  

1 pound frozen tater tots

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 cup cooked and crumbled bacon or plant-based bacon

1 cup black beans, rinsed and drained

1 jalapeño, sliced (seeds removed if less heat is desired)

1/2 cup sour cream (or Greek yogurt)

1/2 cup guacamole

1/4 cup chopped green onions

1/4 cup fresh cilantro, chopped

1 tablespoon taco seasoning

Salt and pepper to taste

Instructions
 

Preheat your oven to 425°F (220°C).

    Spread the frozen tater tots evenly on a large baking sheet. Bake in the preheated oven for 25-30 minutes, or until they are golden brown and crispy, turning them halfway through cooking.

      While the tater tots are baking, prepare the toppings. In a bowl, mix the cooked bacon (or plant-based bacon) with the taco seasoning and set aside.

        Once the tater tots are done, remove them from the oven and sprinkle the cheddar and Monterey Jack cheese evenly over the top.

          Evenly distribute the seasoned bacon, black beans, and sliced jalapeños over the cheesy tater tots.

            Return the baking sheet to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.

              Remove from the oven and let cool slightly. Drizzle sour cream and dollops of guacamole over the top.

                Finish with a sprinkle of chopped green onions and cilantro.

                  Season with salt and pepper to taste.
