4 large russet potatoes, peeled and grated

1 cup sharp cheddar cheese, grated

1/2 cup cooked bacon, chopped (or use turkey bacon for a lighter option)

1/2 cup green onions, sliced

1/2 cup sour cream

1/4 cup mayonnaise

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1/2 cup oil (vegetable or olive) for frying

Instructions
 

Start by rinsing the grated potatoes in cold water to remove excess starch, then drain and pat them dry with a clean kitchen towel.

    In a large mixing bowl, combine the grated potatoes, salt, pepper, garlic powder, onion powder, and half of the grated cheddar cheese. Mix well.

      Heat oil in a large skillet over medium heat. You want enough oil to cover the bottom of the pan evenly.

        Form the potato mixture into small patties (about 1/2 inch thick) and carefully place them in the hot oil. Fry for about 4-5 minutes on each side, or until golden brown and crispy.

          Once cooked, transfer the hash brown patties onto a paper towel-lined plate to absorb excess oil.

            In a small bowl, mix together the sour cream, mayonnaise, and chopped green onions to create a creamy sauce.

              To assemble, layer the crispy hash browns on a serving platter. Top them with the remaining cheddar cheese, chopped bacon, and a drizzle of the creamy sauce.

                Garnish with additional green onions and serve immediately while hot.
