1 lb ground beef

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon chili powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup cooked black beans

1 cup corn (fresh or frozen)

1 cup cooked white rice

1 cup shredded cheese (cheddar or a blend)

1/2 cup sour cream

1/2 cup salsa

4 large flour tortillas

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Cook the Beef: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 2-3 minutes until translucent. Add the minced garlic and cook for an additional 1 minute until fragrant.

    Brown the Meat: Add the ground beef to the skillet. Season with cumin, smoked paprika, chili powder, salt, and black pepper. Break the beef apart with a spatula and cook until browned, about 5-7 minutes. Drain any excess fat.

      Add Vegetables: Stir in the diced red bell pepper, black beans, and corn. Cook for another 3-4 minutes until the bell pepper is tender.

        Assemble the Burritos: To assemble, lay out a large flour tortilla on a flat surface. In the center, layer the beef mixture, followed by a scoop of cooked rice, a generous amount of shredded cheese, a dollop of sour cream, and a spoonful of salsa.

          Wrap It Up: Fold in the sides of the tortilla, then roll it tightly from the bottom up to enclose the filling. Repeat with remaining tortillas and filling.

            Grill (Optional): For an extra touch, preheat a grill or skillet over medium heat. Carefully place the burritos seam-side down and grill each side for about 2-3 minutes until golden and crispy.
