1 cup unsalted butter, softened

3/4 cup powdered sugar

1 teaspoon vanilla extract

2 cups all-purpose flour

1/2 cup almond flour

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1/2 cup berry jam (raspberry or strawberry, for preference)

Extra powdered sugar for dusting

Instructions
 

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Cream the butter and sugar: In a large mixing bowl, use an electric mixer to cream together the softened butter and powdered sugar until light and fluffy, about 3-5 minutes. Add in the vanilla extract and mix until combined.

      Combine the dry ingredients: In a separate bowl, whisk together the all-purpose flour, almond flour, salt, and ground cinnamon.

        Mixing: Slowly add the dry ingredients to the butter mixture, mixing on low speed until just combined. The dough should be soft but not sticky. You may need to finish mixing with your hands.

          Chill the dough: Wrap the dough in plastic wrap and refrigerate for about 30 minutes to an hour, allowing it to firm up for easier rolling.

            Roll out the dough: Once chilled, light flour your work surface and roll out the dough to about 1/8 inch thick. Use a round cookie cutter (about 2 inches in diameter) to cut cookies. Cut out holes in the center of half of the cookies using a smaller cutter.

              Bake: Place the cut-out cookies on the prepared baking sheet and bake for 10-12 minutes, or until lightly golden around the edges. Allow cookies to cool completely on the baking sheet.

                Assemble the cookies: Take the cookies without holes and spread about 1 teaspoon of berry jam onto the center of each cookie. Top with the cookies that have their centers cut out, pressing gently to create a sandwich.

                  Finishing touch: Dust the tops of the cookies with extra powdered sugar for added sweetness and decoration.
