Ingredients

1 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

Zest of 1 large lemon

2 tablespoons fresh lemon juice

3 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup fresh raspberries (or frozen, thawed)

1/2 cup powdered sugar (for dusting)

Instructions

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.

Beat in the eggs, one at a time, mixing well after each addition. Then stir in the vanilla extract, lemon zest, and lemon juice until thoroughly combined.

In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing gently until just combined.

Carefully fold in the fresh raspberries, ensuring they are evenly dispersed in the dough without breaking them apart.

Using a cookie scoop or a spoon, drop rounded tablespoons of the dough onto the prepared baking sheets, spacing them about 2 inches apart.

Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the cookies are set in the center.

Remove from the oven and allow them to cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.

Once cooled, dust the cookies with powdered sugar for a beautiful finish.

Prep Time: 20 minutes | Total Time: 32 minutes | Servings: 24 cookies
