Ingredients

8 oz (225g) spaghetti or pasta of choice

1 bunch asparagus, trimmed and cut into 2-inch pieces

2 tablespoons olive oil

2 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

½ cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil or parsley for garnish (optional)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.

Blanch the Asparagus: In the same pot of boiling water, add the asparagus pieces. Blanch for about 2-3 minutes until bright green and tender-crisp. Remove the asparagus with a slotted spoon and transfer to a bowl of ice water to stop the cooking process. Drain and set aside.

Sauté Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Be careful not to burn it.

Combine Ingredients: Add the cooked pasta and blanched asparagus to the skillet with the garlic. Toss to combine.

Add Flavor: Stir in the lemon zest, lemon juice, and Parmesan cheese. Mix thoroughly. If the pasta appears dry, gradually add reserved pasta water until you reach your desired consistency.

Season: Season with salt and pepper to taste. Mix well to ensure all ingredients are evenly coated.

Serve Immediately: Plate the pasta and garnish with additional Parmesan cheese and fresh basil or parsley if desired.
