1 large cucumber, diced

1 cup cherry tomatoes, halved

1/4 red onion, finely diced

1/4 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

3 tablespoons olive oil

2 tablespoons lemon juice

Zest of 1 lemon

Salt and pepper to taste

Instructions

Cook the Orzo: In a medium pot, bring the vegetable broth to a boil. Add the orzo and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside to cool.

Prepare the Vegetables: While the orzo is cooking, dice the cucumber, halve the cherry tomatoes, and finely dice the red onion.

Mix the Dressing: In a small bowl, whisk together the olive oil, lemon juice, lemon zest, salt, and pepper until well combined.

Combine Salad Ingredients: In a large bowl, combine the cooled orzo, diced cucumber, cherry tomatoes, red onion, and chopped parsley.

Dress the Salad: Pour the dressing over the salad mixture and toss gently until all the ingredients are well coated.

Add Feta: Carefully fold in the crumbled feta cheese, taking care not to break it up too much.

Taste and Adjust: Taste the salad and adjust the seasoning with additional salt, pepper, or lemon juice as needed.

Serve: Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.

                  Prep Time: 15 minutes | Total Time: 45 minutes | Servings: 4

                    - Presentation Tips: Serve the salad in a large bowl or individual serving dishes, garnished with extra parsley and a slice of lemon on the side for an eye-catching presentation.
