2 cans (5 oz each) tuna in water, drained

1/2 cup breadcrumbs (panko for crunch)

1/4 cup fresh parsley, chopped

1/4 cup green onion, finely sliced

1 large egg

2 tablespoons mayonnaise

2 tablespoons Dijon mustard

2 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

Salt and pepper to taste

Olive oil for frying

Instructions
 

In a large mixing bowl, flake the drained tuna with a fork until it’s finely shredded.

    Add the breadcrumbs, parsley, green onion, garlic, and lemon zest to the bowl. Mix until combined.

      In a separate small bowl, whisk together the egg, mayonnaise, Dijon mustard, lemon juice, salt, and pepper.

        Pour the egg mixture over the tuna mixture and stir gently until everything is just combined. Avoid over-mixing to keep the cakes tender.

          Chill the mixture in the refrigerator for at least 30 minutes to help it firm up and make them easier to shape.

            After chilling, form the mixture into small patties, about 2-3 inches in diameter. You should yield about 8-10 patties.

              Heat about 2 tablespoons of olive oil in a skillet over medium heat.

                Carefully add the tuna cakes to the hot skillet, cooking in batches if necessary to avoid overcrowding.

                  Fry for about 4-5 minutes on each side, or until they are golden brown and crispy.

                    Once cooked, remove the tuna cakes and place them on a plate lined with paper towels to absorb excess oil.
