Ingredients

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup cream cheese, softened

1/2 cup granulated sugar

1/4 cup unsalted butter, softened

2 large eggs

Zest of 1 lemon

1/4 cup fresh lemon juice

1 teaspoon vanilla extract

1/2 cup sour cream

1/4 cup powdered sugar (for glaze)

1 tablespoon lemon juice (for glaze)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Cream Cheese Mixture: In a large mixing bowl, use an electric mixer to beat the cream cheese, granulated sugar, and butter until light and fluffy, about 2 minutes.

Add Eggs and Flavors: Beat in the eggs one at a time, mixing well after each addition. Add the lemon zest, fresh lemon juice, and vanilla extract; mix until combined.

Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the cream cheese mixture, alternating with the sour cream. Start with the dry ingredients, mixing until just combined.

Scoop the Batter: Divide the batter evenly among the muffin cups, filling each about two-thirds full.

Bake: Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.

Cool and Glaze: Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Prepare the Glaze: In a small bowl, mix the powdered sugar with 1 tablespoon of lemon juice until smooth. Drizzle the glaze over cooled muffins for a sweet finish.

Prep Time: 15 minutes | Total Time: 35-40 minutes | Servings: 12 muffins

                      - Presentation Tips: Serve these delightful muffins on a pastel-colored platter or a tiered cake stand, perfect for an Easter brunch. Garnish with a small sprinkle of lemon zest on top of the glaze for added flair.
