1 1/2 cups granulated sugar

1/2 cup unsalted butter, softened

3 large eggs

1/4 cup all-purpose flour

1/4 teaspoon salt

1/2 teaspoon baking powder

1/2 cup whole milk

Zest of 2 lemons

1/2 cup fresh lemon juice

1 teaspoon vanilla extract

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Make the Pie Crust: If using a store-bought pie crust, place it in a 9-inch pie dish and set aside. If making homemade, prepare your favorite pie crust recipe and blind-bake for about 10 minutes until lightly golden.

      Cream the Butter and Sugar: In a large mixing bowl, cream together softened butter and granulated sugar until light and fluffy, about 3-4 minutes.

        Add Eggs: Beat in the eggs one at a time, mixing well after each addition.

          Combine Dry Ingredients: In a separate bowl, whisk together flour, salt, and baking powder. Gradually add this mixture to the butter-sugar mixture, stirring until just combined.

            Incorporate Wet Ingredients: Slowly add the whole milk, lemon zest, lemon juice, and vanilla extract to the mixture, stirring gently until smooth.

              Pour into Crust: Pour the filling into the prepared pie crust, distributing it evenly.

                Bake: Bake in the preheated oven for 30-35 minutes, or until the filling is set and the top is lightly golden. The center may jiggle slightly; it will firm up as it cools.
