Ingredients
  

4 pieces of cod fillets (about 6 oz each)

3 tablespoons unsalted butter

2 tablespoons olive oil

2 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper to taste

Fresh parsley for garnish

Instructions
 

Begin by patting the cod fillets dry with paper towels. This step ensures a nice sear. Season both sides of the fillets with salt and pepper.

    In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat.

      Once the butter is melted and bubbling, gently place the cod fillets in the skillet, skin-side down if applicable. Sauté for about 4-5 minutes on each side until golden brown and cooked through. The internal temperature should reach 145°F (63°C).

        Remove the fillets from the skillet and set them aside on a plate.

          In the same skillet, lower the heat to medium and add the remaining 2 tablespoons of butter. After it melts, add the minced garlic and sauté for 30 seconds until fragrant.

            Stir in the lemon zest, lemon juice, and fresh thyme, and cook for an additional minute. Scrape up any bits from the bottom of the skillet to enhance the flavor.

              Return the cod fillets to the skillet, spooning the lemon butter sauce over them. Let it cook for another minute, allowing the flavors to meld.

                Serve the sautéed cod hot, drizzled with the lemon butter sauce, and garnished with freshly chopped parsley.
