1 cup unsalted butter, softened

1 cup granulated sugar

2 cups all-purpose flour

1/2 teaspoon salt

1/4 teaspoon baking powder

1 teaspoon vanilla extract

Zest of 1 lemon

3 large eggs

1 cup granulated sugar (for filling)

1/4 cup all-purpose flour (for filling)

1/2 teaspoon baking powder (for filling)

2/3 cup freshly squeezed lemon juice

Powdered sugar (for dusting)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a muffin tin or line with cupcake liners.

    Make the Cookie Dough: In a large bowl, cream together the softened butter and 1 cup granulated sugar until light and fluffy. Add in the vanilla extract and lemon zest, mixing well.

      Combine Dry Ingredients: In a separate bowl, whisk together the flour, salt, and baking powder. Gradually add this dry mixture to the creamed butter mixture, stirring until fully incorporated.

        Form the Cookie Cups: Take a tablespoon of the cookie dough and press it into the bottom and up the sides of each muffin tin cavity, creating a cup shape. Repeat until all dough is used.

          Bake the Cookie Cups: Bake the cookie cups in the preheated oven for about 10 minutes or until the edges are lightly golden. Remove from the oven and allow to cool slightly in the pan.

            Prepare the Lemon Filling: In a medium bowl, whisk together the 1 cup granulated sugar, 1/4 cup flour, and 1/2 teaspoon baking powder. Add the eggs and freshly squeezed lemon juice, whisking until smooth.

              Fill the Cookie Cups: Pour the lemon filling into each baked cookie cup until just full.

                Bake Again: Return to the oven and bake for an additional 15-18 minutes, or until the filling is set and lightly golden on top.

                  Cool and Serve: Remove from the oven and allow to cool completely in the pan. Carefully remove the cookie cups. Dust with powdered sugar before serving.
