10 large jalapeños

2 cups leftover mac 'n' cheese

1 cup shredded sharp cheddar cheese (divided)

½ cup cream cheese (softened)

1 teaspoon garlic powder

½ teaspoon smoked paprika

½ teaspoon black pepper

½ teaspoon salt

½ cup panko breadcrumbs

1 tablespoon olive oil

Fresh cilantro or chives for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare Jalapeños: Cut the jalapeños in half lengthwise and remove the seeds and membranes for less heat. Make sure to wear gloves while handling them to avoid irritation.

      Make the Filling: In a mixing bowl, combine the leftover mac 'n' cheese, half of the cheddar cheese (½ cup), cream cheese, garlic powder, smoked paprika, black pepper, and salt. Mix until well combined.

        Fill the Jalapeños: Spoon the mac 'n' cheese mixture into each halved jalapeño, pressing down lightly to ensure they're filled to the brim.

          Prepare the Topping: In a small bowl, mix panko breadcrumbs with olive oil and the remaining ½ cup of cheddar cheese until combined.

            Top the Jalapeños: Generously sprinkle the breadcrumb mixture over the filled jalapeños.

              Bake: Place the stuffed jalapeños on a baking sheet lined with parchment paper. Bake in the preheated oven for 20–25 minutes or until the jalapeños are tender and the topping is golden brown.

                Garnish and Serve: Remove from the oven and let them cool for a few minutes. Garnish with chopped fresh cilantro or chives if desired, then serve warm.
