Ingredients
  

1 lb ground beef or Italian sausage

1 onion, diced

3 cloves garlic, minced

1 can (28 oz) crushed tomatoes

4 cups chicken or vegetable broth

2 cups uncooked pasta (like fusilli or lasagna noodles, broken into pieces)

1 tsp dried oregano

1 tsp dried basil

1/2 tsp red pepper flakes (optional)

2 cups fresh spinach or kale, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Salt and pepper, to taste

Fresh basil or parsley, for garnish

Instructions
 

In a large pot or Dutch oven, brown the ground beef or sausage over medium heat until fully cooked, about 5-7 minutes. Drain excess fat if necessary.

    Add the diced onion and cook until soft and translucent, approximately 3-4 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Pour in the crushed tomatoes and chicken or vegetable broth. Stir well to combine.

        Add the uncooked pasta, dried oregano, dried basil, and red pepper flakes. Bring the mixture to a gentle boil, then reduce heat to a simmer. Cover and cook for about 10-12 minutes, or until the pasta is al dente.

          Stir in the chopped spinach or kale and let it simmer for another 2-3 minutes until the greens are wilted.

            In a small bowl, mix together the ricotta cheese, half of the shredded mozzarella, and grated Parmesan cheese. Season with a pinch of salt and pepper.

              Serve the soup hot in bowls, adding a generous scoop of the cheese mixture on top and sprinkling with the remaining mozzarella. Garnish with fresh basil or parsley before serving.
