1 lb (450g) beef sirloin, thinly sliced against the grain

1/4 cup soy sauce

2 tablespoons brown sugar

1 tablespoon sesame oil

2 cloves garlic, minced

1 tablespoon ginger, minced

1 tablespoon gochujang (Korean red chili paste)

2 green onions, chopped (plus more for garnish)

1/2 teaspoon black pepper

2 cups cooked jasmine rice

1 cup broccoli florets

1 carrot, julienned

1/2 cup thinly sliced bell peppers (red, yellow, or green)

2 tablespoons vegetable oil

Sesame seeds, for garnish

Optional: fried egg for topping

Instructions
 

Marinate the Beef: In a mixing bowl, combine soy sauce, brown sugar, sesame oil, minced garlic, minced ginger, gochujang, green onions, and black pepper. Add the thinly sliced beef and mix well to ensure all pieces are coated. Cover and let marinate for at least 30 minutes, or up to 2 hours in the refrigerator for deeper flavor.

    Prepare the Vegetables: While the beef is marinating, rinse the broccoli and prepare the carrot and bell peppers. Set aside.

      Cook the Beef: Heat a large skillet or wok over medium-high heat and add 1 tablespoon of vegetable oil. Once hot, add the marinated beef in a single layer (you may need to do this in batches) and cook for about 2-3 minutes until browned and cooked through. Remove beef from the skillet and set aside.

        Stir-Fry the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the broccoli and stir-fry for 2-3 minutes. Then, add the carrot and bell peppers, continuing to stir-fry until the vegetables are tender yet crisp, about another 3-4 minutes.

          Combine Everything: Return the cooked beef to the skillet with the vegetables. Toss everything together for another minute to heat through, allowing the flavors to meld.

            Serve: To assemble, place a generous serving of jasmine rice in each bowl. Top with the beef and vegetable mixture. If desired, add a fried egg on top, sprinkle with sesame seeds and extra chopped green onions for garnish.
