Ingredients

1 lb kielbasa sausage, sliced into half-moons

2 medium russet potatoes, diced into small cubes

1 small yellow onion, chopped

2 cloves garlic, minced

1 bell pepper (red or green), diced

4 large eggs

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Par-cook the Potatoes: In a medium pot, bring water to a boil and add the diced potatoes. Boil for about 5 minutes until slightly tender but not fully cooked. Drain and set aside.

Sauté the Kielbasa: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced kielbasa and cook for 5-7 minutes until browned. Remove the kielbasa from the skillet and set aside.

Cook the Vegetables: In the same skillet, add another tablespoon of olive oil, followed by the chopped onion and bell pepper. Sauté for about 3-4 minutes until the vegetables are soft. Add the minced garlic and cook for an additional minute.

Combine Ingredients: Add the par-cooked potatoes to the skillet along with the smoked paprika, thyme, salt, and pepper. Stir everything together and cook for another 10-12 minutes, stirring occasionally, until the potatoes are crispy and cooked through.

Incorporate Kielbasa: Return the browned kielbasa to the skillet, mixing it in with the veggies and potatoes. Cook for another 2-3 minutes to heat through.

Add the Eggs: Make four small wells in the hash mixture and crack an egg into each well. Cover the skillet and let the eggs cook to your desired doneness (about 5-7 minutes for runny yolks).

Serve: Once the eggs are cooked, remove the skillet from heat. Garnish the hash with fresh parsley for a pop of color and serve immediately.

                  - Presentation Tips: Serve the hash directly from the skillet for a rustic look, or plate individually with a sprinkle of fresh parsley and a dash of hot sauce on the side for added flavor.
