4 cups water

2 tablespoons green tea leaves (Kashmiri chai or any good quality)

1 teaspoon baking soda

2 cups whole milk

4-5 tablespoons sugar (adjust to taste)

1-2 cardamom pods, crushed

Pinch of salt

Chopped pistachios and almonds for garnish

A few strands of saffron (optional)

Instructions
 

In a heavy-bottomed pot, bring the water to a boil over medium heat.

    Once boiling, add the green tea leaves and baking soda. This combination will help develop the signature pink color.

      Using a ladle, vigorously whisk the mixture for about 15-20 minutes until it reduces to about half. The tea should start turning a deep reddish-brown hue.

        Slowly add the milk and bring it back to a boil. As it heats, continue whisking or churning to aerate the tea.

          After 5-7 minutes, add sugar, crushed cardamom, and salt, stirring until the sugar has dissolved.

            Reduce the heat and simmer the chai for another 5 minutes.

              Remove from heat, and if desired, add saffron strands for an elegant touch of flavor.

                Strain the chai into cups, discarding the tea leaves, and garnish with chopped pistachios and almonds.
