1 pound sirloin steak, cut into bite-sized cubes

4 tablespoons unsalted butter, divided

4 cloves garlic, minced

1 teaspoon fresh thyme, chopped

2 tablespoons fresh parsley, chopped, for garnish

2 large russet potatoes, peeled and diced

½ cup milk

4 ounces cream cheese, softened

1 cup shredded sharp cheddar cheese

Prepare the Mashed Potatoes: In a large pot, bring salted water to a boil. Add the diced potatoes and cook until fork-tender, about 15-20 minutes. Drain and return to the pot.
