4 chicken thighs (bone-in, skin-on)

2 tablespoons jerk seasoning (store-bought or homemade)

2 tablespoons olive oil

1 lime (juiced)

1 teaspoon brown sugar

Salt and pepper to taste

For the Pineapple Salsa:

1 cup fresh pineapple, diced

1 small red onion, finely chopped

1 jalapeño, seeded and minced

1/4 cup cilantro, chopped

1 lime (juiced)

In a bowl, mix the jerk seasoning, olive oil, lime juice, brown sugar, salt, and pepper to form a marinade.

    Rub the marinade all over the chicken thighs, ensuring an even coating. Let it marinate in the fridge for at least 1 hour (or up to overnight for maximum flavor).

      Preheat your grill or grill pan to medium-high heat.

        Grill the chicken thighs for about 6-8 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the skin is crispy and charred.
