Ingredients

2 cups all-purpose flour

1/2 cup unsalted butter, softened

1/2 cup sugar

1 large egg

1 teaspoon vanilla extract

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup fruit jam (your choice: raspberry, apricot, or strawberry)

Powdered sugar for dusting (optional)

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and sugar together until light and fluffy. This should take about 3-4 minutes.

Add Egg and Vanilla: Add the egg and vanilla extract to the butter mixture, mixing well until combined.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet mixture, stirring until just combined.

Chill Dough: Wrap the dough in plastic wrap and refrigerate for at least 30 minutes. This will make it easier to handle.

Shape Cookies: Once chilled, take small portions of dough (about 1 tablespoon) and roll them into balls. Place them on the prepared baking sheet about 2 inches apart.

Make Indentations: Use your thumb or the back of a teaspoon to make an indentation in the center of each ball.

Fill with Jam: Spoon about 1/2 teaspoon of your chosen jam into each indentation, being careful not to overfill.

Bake: Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.

Cool and Dust: Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack. Once fully cooled, dust with powdered sugar if desired.
