Ingredients

1 lb boneless, skinless chicken breasts

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1/2 cup chopped fresh jalapeños (remove seeds for less heat)

1/4 cup crispy bacon bits

1 tbsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

Salt and pepper, to taste

8 small flour or corn tortillas

1/2 cup chopped fresh cilantro (optional, for garnish)

1 avocado, sliced (optional, for garnish)

Lime wedges, for serving

Instructions

Cook the Chicken: In a skillet over medium heat, cook the chicken breasts for about 6-7 minutes per side until fully cooked and no longer pink in the middle. Remove from heat and let them cool slightly before shredding them using two forks.

Prepare the Filling: In a mixing bowl, combine the shredded chicken, cream cheese, cheddar cheese, chopped jalapeños, bacon bits, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until fully combined and creamy.

Warm the Tortillas: In a dry skillet over medium heat, warm the tortillas one at a time for about 30 seconds on each side until they are pliable.

Assemble the Tacos: Divide the jalapeño popper chicken mixture among the warm tortillas. Fold them over, and if desired, you can secure them with a toothpick.

Serve & Garnish: Serve the tacos warm, garnished with fresh cilantro and avocado slices. Squeeze fresh lime juice over the top for an extra zing. Enjoy with your favorite salsa, if desired!
