Ingredients

8 oz cream cheese, softened

1 cup sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1/2 cup pickled jalapeños, minced (adjust for heat preference)

1/4 cup green onions, chopped

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp smoked paprika

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs, beaten

Vegetable oil for frying

Salt and pepper to taste

Instructions

In a large mixing bowl, combine the softened cream cheese, sharp cheddar cheese, mozzarella cheese, minced pickled jalapeños, chopped green onions, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until well combined and smooth.

Use your hands to form the cheese mixture into small balls, about 1 inch in diameter. Place the balls on a baking sheet lined with parchment paper, and refrigerate for at least 30 minutes to firm up.

Prepare your breading station by setting up three shallow bowls. Place the flour in the first bowl, the beaten eggs in the second bowl, and the panko breadcrumbs in the third bowl.

Take each cheese ball from the refrigerator and coat it in flour, shaking off any excess. Next, dip it into the beaten eggs, ensuring it's fully coated, and finally roll it in the panko breadcrumbs until evenly coated. Repeat until all cheese balls are breaded.

In a large skillet or deep fryer, heat the vegetable oil over medium heat (about 350°F/175°C). Carefully add a few cheese balls to the hot oil, frying them in batches to avoid overcrowding.

Fry each batch for about 3-4 minutes, or until they are golden brown and crispy on the outside. Use a slotted spoon to transfer the cooked cheese balls to a paper towel-lined plate to drain any excess oil.

Serve the jalapeño popper cheese balls warm, with your favorite dipping sauce (like ranch or salsa) for a delightful appetizer or snack.
