Ingredients

1 lb pork tenderloin, cut into 1-inch cubes

1 fresh peach, diced

1 jalapeño pepper, seeded and minced

2 tablespoons brown sugar

1 tablespoon soy sauce

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

½ cup cream cheese, softened

12 mini skewers or toothpicks

Chopped fresh cilantro for garnish

Instructions

Preheat your grill or grill pan to medium-high heat.

In a mixing bowl, combine the diced peach, minced jalapeño, brown sugar, soy sauce, garlic powder, smoked paprika, salt, and pepper. Mix well to create a sweet and spicy marinade.

Add the pork cubes to the marinade, ensuring they are well coated. Cover the bowl and let the pork marinate for at least 30 minutes in the refrigerator to absorb the flavors.

After marinating, remove the pork from the refrigerator.

Take one piece of pork and add a small dollop of softened cream cheese on top, followed by a pinch of the peach and jalapeño mixture.

Secure the filling in place by threading the pork onto the mini skewers or toothpicks, making sure to include the peach mixture. Repeat this for all the pork bites.

Once all bites are assembled, place them on the preheated grill. Cook for 6-8 minutes, turning occasionally, until the pork is cooked through and has nice grill marks. The internal temperature should reach 145°F (63°C).

Remove the pork bites from the grill and let them rest for a few minutes.

Serve the Jalapeno Peach Pork Bites warm, garnished with chopped fresh cilantro for a pop of color and flavor.
