Ingredients

2 cups all-purpose flour

1 cup cornmeal

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup buttermilk

1/4 cup honey

1 large egg

1/4 cup unsalted butter, melted

2 jalapenos, finely chopped (seeds removed for less heat)

1/2 cup shredded cheddar cheese (optional)

Instructions

Preheat the oven to 375°F (190°C). Grease a 9x5 inch loaf pan with cooking spray or butter.

In a large mixing bowl, whisk together the flour, cornmeal, baking powder, baking soda, and salt until well combined.

In another bowl, whisk together the buttermilk, honey, egg, and melted butter until smooth.

Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix.

Fold in the chopped jalapenos and cheddar cheese (if using) until evenly distributed.

Pour the batter into the prepared loaf pan, smoothing the top with a spatula.

Bake for 30-35 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.

Remove from the oven and allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
