1 can (15 oz) corn, drained

1 cup cornmeal

1/2 cup all-purpose flour

1 jalapeño pepper, finely chopped (seeds removed for less heat)

1/4 cup chopped green onions

1/2 cup shredded cheddar cheese

1 tablespoon baking powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon garlic powder

1 cup buttermilk

Oil for frying

In a large bowl, combine the cornmeal, flour, baking powder, salt, black pepper, and garlic powder. Mix well.

    In another bowl, mix together the drained corn, finely chopped jalapeño, green onions, and shredded cheddar cheese.

      Pour the buttermilk into the corn mixture and stir until combined.

        Gradually fold the dry ingredients into the wet mixture until a thick batter forms. Be careful not to over-mix; a few lumps are acceptable.

          Heat oil in a deep frying pan over medium heat. You'll need about an inch of oil for frying.

            Once the oil is hot (about 350°F or 175°C), use a spoon or small ice cream scoop to drop heaping tablespoons of batter into the oil.

              Fry the nuggets in batches, being careful not to overcrowd the pan. Cook for about 3-4 minutes on each side or until golden brown and crispy.

                Remove the fried nuggets with a slotted spoon and place them on paper towels to drain excess oil.

                  Repeat until all the batter is used up.
