6 slices of thick-cut bacon, chopped

1 medium onion, finely chopped

4 jalapeños, seeded and finely diced

4 cloves of garlic, minced

1 cup brown sugar

1 cup apple cider vinegar

1/2 teaspoon smoked paprika

1/4 teaspoon black pepper

1/4 teaspoon salt

Instructions
 

In a large skillet over medium heat, cook the chopped bacon until crispy. Use a slotted spoon to transfer the bacon to a paper towel-lined plate to drain, leaving the rendered fat in the pan.

    In the same skillet, add the finely chopped onion and cook for about 5 minutes until softened and translucent.

      Add the diced jalapeños and cook for an additional 2-3 minutes until they begin to soften.

        Stir in the minced garlic and cook for another minute until fragrant.

          Add the cooked bacon back into the skillet.

            Pour in the brown sugar and apple cider vinegar, stirring well to combine.

              Add the smoked paprika, black pepper, and salt. Bring the mixture to a simmer.

                Lower the heat and let the jam simmer for 25-30 minutes, stirring occasionally, until thickened to a jam-like consistency.

                  Remove from heat and let it cool slightly before transferring it to a jar. Store in the refrigerator for up to two weeks.
