½ cup unsalted butter, softened

1 cup granulated sugar

3 large eggs

Preheat your oven to 350°F (175°C). Grease and flour a loaf pan (9x5 inches) or line it with parchment paper.

    In a medium bowl, whisk together the flour, baking powder, and salt until well combined. Set aside.

      In a large mixing bowl, using an electric mixer, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.

        Add eggs to the mixture one at a time, beating well after each addition. Then mix in the vanilla extract and lemon zest until fully incorporated.

          Gradually add the dry ingredients to the wet mixture, alternating with the lemon juice and Greek yogurt. Start and end with the dry ingredients. Mix until just combined; do not overmix.

            Pour the batter into the prepared loaf pan and smooth the top with a spatula.

              Bake in the preheated oven for 50-60 minutes or until a toothpick inserted in the center comes out clean.

                Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, turn it out onto a wire rack to cool completely.

                  Once cooled, dust the top with powdered sugar for a beautiful finish.
