Italian Grilled Cheese Sandwiches

Ingredients
  

4 slices of ciabatta bread

1 cup fresh mozzarella cheese, sliced

1/2 cup aged provolone cheese, sliced

1/2 cup roasted red peppers, sliced

1/4 cup fresh basil leaves

2 tablespoons pesto sauce

2 tablespoons olive oil

Salt and pepper to taste

Balsamic glaze for drizzling (optional)

Instructions
 

Preheat a skillet or grill pan over medium heat.

    Take two slices of ciabatta bread and spread 1 tablespoon of olive oil on the outside of each slice.

      Spread 1 tablespoon of pesto sauce on the inside of each slice of bread.

        Layer half of the mozzarella and provolone cheese on one slice of bread.

          Add the roasted red peppers and fresh basil leaves on top.

            Season with a pinch of salt and pepper, then top with the remaining cheese.

              Place the second slice of bread on top, pesto side down, creating a sandwich.

                Carefully place the sandwich in the heated skillet or grill pan. Cook for about 3-4 minutes, or until the bread is golden brown and the cheese starts to melt.

                  Use a spatula to press down gently on the sandwich for better contact with the heat, then flip it over and cook the other side for an additional 3-4 minutes.

                    Once both sides are golden brown and the cheese has melted, remove the sandwich from the skillet.

                      Slice the sandwich in half, and if desired, drizzle with balsamic glaze before serving.
