4 medium-sized russet potatoes, peeled and cubed

1 cup sharp cheddar cheese, grated

1/2 cup green onions, finely chopped

1/2 cup cooked bacon, chopped (or use mushrooms for a vegetarian option)

1/2 cup milk

1/4 cup unsalted butter, melted

1 teaspoon garlic powder

Salt and pepper to taste

1 pre-made pie crust (store-bought or homemade)

1 egg (for egg wash, optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large pot, boil the cubed potatoes in salted water for about 15 minutes, or until tender. Drain and return to the pot.

      Mash the potatoes with milk, melted butter, garlic powder, salt, and pepper until smooth and creamy. Stir in the cheddar cheese, green onions, and chopped bacon (or mushrooms). Mix well to combine.

        Roll out the pie crust and fit it into a 9-inch pie dish. Trim any excess crust hanging over the edges.

          Spoon the potato mixture into the pie crust, spreading it evenly.

            If desired, brush the edges of the crust with a beaten egg for a golden finish.

              Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and the filling is heated through.

                Remove from the oven and let it cool for about 10 minutes before slicing.
