4 large russet potatoes, thinly sliced

2 tablespoons olive oil

Salt and pepper to taste

1 cup shredded cheddar cheese

1/2 cup crumbled cooked bacon

1/2 cup green onions, chopped

1/2 cup sour cream

1/4 cup pickled jalapeños (optional)

1/4 cup fresh cilantro, chopped

Instructions
 

Preheat your oven to 425°F (220°C).

    Wash and scrub the russet potatoes, then slice them thinly using a mandoline or sharp knife.

      Place the potato slices in a large bowl and toss them with olive oil, salt, and pepper until evenly coated.

        Arrange the potato slices in a single layer on a baking sheet, ensuring they don’t overlap.

          Bake in the preheated oven for 20-25 minutes or until golden brown and crispy, flipping them halfway through for even cooking.

            Remove the baked potato slices from the oven and sprinkle the shredded cheddar cheese evenly over the top.

              Add the crumbled bacon on top of the cheese.

                Return the nachos to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.

                  Remove from the oven and sprinkle with chopped green onions, jalapeños (if using), and cilantro.

                    Serve hot with a dollop of sour cream on top or on the side for dipping.
