2 cups mashed potatoes (prepared using about 5 medium potatoes)

1 cup chopped kale or cabbage (preferably fresh)

1/2 cup green onions, finely chopped

1/2 cup milk (or cream for richness)

4 tablespoons unsalted butter

Salt and pepper to taste

Pinch of nutmeg (optional)

Extra butter for serving

Instructions
 

Begin by boiling the potatoes in salted water until they are tender, about 15-20 minutes. Drain them well and return to the pot.

    While the potatoes are boiling, sauté the kale or cabbage in a large skillet with 2 tablespoons of butter over medium heat until softened, about 5-7 minutes. Add the chopped green onions and cook for an additional 2 minutes.

      Mash the boiled potatoes using a potato masher or ricer until smooth. Slowly add the milk or cream, mixing until combined.

        Stir in the sautéed kale/cabbage and green onions into the mashed potatoes. Add the remaining 2 tablespoons of butter and season with salt, pepper, and a pinch of nutmeg (if using), stirring until everything is well incorporated.

          Transfer the colcannon to a serving dish. Make a small well in the center and add a generous dollop of extra butter for melting on top.
