8 Irish pork sausages

2 tablespoons vegetable oil

4 large onions, thinly sliced

2 cloves garlic, minced

2 cups beef broth

1 cup Guinness-flavored non-alcoholic beer (or dark stout)

2 tablespoons Worcestershire sauce

1 tablespoon cornstarch (mixed with 2 tablespoons cold water)

Salt and black pepper to taste

4 large russet potatoes, peeled and cubed

½ cup unsalted butter

½ cup milk

Fresh parsley, chopped (for garnish)

Instructions
 

In a large skillet over medium heat, add the vegetable oil. While the oil heats, season the sausages with salt and pepper.

    Once the oil is hot, add the sausages to the skillet. Cook them for about 10-12 minutes, turning frequently, until they are browned and cooked through. Remove them from the skillet and keep warm.

      In the same skillet, add the sliced onions. Cook them on medium-low heat for about 15-20 minutes, stirring occasionally, until they are caramelized and golden brown. Add the minced garlic during the last minute of cooking.

        Pour the beef broth and non-alcoholic beer into the skillet, then stir in the Worcestershire sauce. Bring to a simmer.

          Add the cornstarch mixture to the gravy, stirring constantly until the gravy thickens. Season with salt and black pepper to taste. Reduce heat to low and keep warm.

            Meanwhile, prepare the mashed potatoes. Place the cubed potatoes in a large pot and cover with cold water. Add a pinch of salt, then bring to a boil over high heat. Once boiling, reduce to a simmer and cook for 15-20 minutes or until tender.

              Drain the potatoes and return them to the pot. Add the butter and milk, then mash until smooth and creamy. Season with salt and pepper to taste.

                To serve, place a generous scoop of mashed potatoes on each plate, top with 2-3 sausages, and ladle the Guinness onion gravy over the entire dish. Garnish with fresh parsley.
