Irish Bacon, Cabbage, and Potato Soup

6 slices of Irish bacon or pancetta, chopped

1 medium onion, diced

3 cloves of garlic, minced

4 medium potatoes, peeled and diced

4 cups of chicken broth

2 cups of green cabbage, chopped

1 teaspoon dried thyme

1 teaspoon black pepper

1 tablespoon olive oil

Salt to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped Irish bacon and cook until crispy, about 5-7 minutes. Use a slotted spoon to transfer the bacon to a plate, leaving the rendered fat in the pot.

    In the same pot, add the diced onion and cook until translucent, about 4 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Add the diced potatoes to the pot, stirring to coat them with the bacon fat. Pour in the chicken broth and bring to a boil.

        Once boiling, reduce the heat to a simmer and add the dried thyme, black pepper, and salt to taste. Cover and cook for 15-20 minutes or until the potatoes are tender.

          Add the chopped cabbage and the crispy bacon back into the soup. Stir and cook for another 5-10 minutes until the cabbage is softened but still vibrant green.

            Taste and adjust seasoning if necessary.

              Serve hot, garnished with fresh parsley for a touch of color and flavor.
