1 lb (450g) chicken breast, cubed

12 oz (340g) penne pasta

1 cup cherry tomatoes, halved

1 cup spinach, fresh

1/2 cup cream cheese, softened

1 cup chicken broth

1 cup grated Parmesan cheese

3 cloves garlic, minced

1 teaspoon Italian seasoning

2 tablespoons olive oil

Salt and pepper to taste

Fresh basil, for garnish

Sauté Chicken: Set your Instant Pot to 'Sauté' mode. Add olive oil and let it warm. Season the cubed chicken with salt, pepper, and Italian seasoning. Add the chicken to the pot and sauté until it’s browned on all sides, about 4-5 minutes.

    Add Aromatics: Add minced garlic to the pot and sauté for another minute until fragrant.

      Add Liquid and Pasta: Pour in the chicken broth and gently scrape the bottom of the pot to deglaze. Add the penne pasta and make sure it's submerged in the broth. Do not stir; just push it down gently.

        Pressure Cook: Close the lid, set the valve to 'Sealing', and cook on 'Manual' or 'Pressure Cook' mode for 5 minutes.

          Release Pressure: Once the cooking time is up, perform a quick release by carefully turning the valve to 'Venting'.

            Stir in Cream: Open the lid and immediately stir in the softened cream cheese and grated Parmesan cheese until it’s well combined and creamy.

              Add Spinach and Tomatoes: Gently fold in the fresh spinach and cherry tomatoes, allowing the residual heat to wilt the spinach. Adjust seasoning with salt and pepper if needed.
