Ingredients

8 oz elbow macaroni

4 cups vegetable broth

1 cup heavy cream

2 cups sharp cheddar cheese, shredded

1 cup Gruyère cheese, shredded

1/2 cup grated Parmesan cheese

2 tablespoons truffle oil

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and black pepper to taste

1/2 cup panko bread crumbs

2 tablespoons unsalted butter, melted

Fresh chives, chopped (for garnish)

Instructions

Add Ingredients to Instant Pot: Place the elbow macaroni and vegetable broth into the Instant Pot. Make sure the broth covers the pasta completely.

Cook the Pasta: Secure the lid and set the Instant Pot to manual high pressure for 4 minutes. Once done, allow a natural release for 4 minutes before performing a quick release for any remaining pressure.

Add Cream and Cheese: Carefully open the lid and stir in heavy cream, shredded cheddar, Gruyère, and Parmesan cheese until the cheeses melt and create a creamy sauce.

Flavor it Up: Add the truffle oil, garlic powder, onion powder, salt, and black pepper. Stir well to combine all the ingredients thoroughly.

Prepare the Topping: In a small bowl, mix the panko bread crumbs with melted butter, then sprinkle evenly over the mac and cheese.

Broil (Optional): If desired, transfer the mac and cheese to an oven-safe dish and broil for 2-3 minutes until the topping is golden and crispy. This step is optional but adds a delightful crunch!

Serve: Spoon the mac and cheese into bowls or plates and garnish with chopped chives for a fresh touch.

                Prep Time: 10 min | Total Time: 30 min | Servings: 4-6

                  - Presentation Tips: Serve in individual ramekins to create a cozy and inviting feel, and drizzle with a little extra truffle oil before serving for an elegant finish.
