Ingredients
  

1 lb Italian sausage (bulk or casing removed)

1 medium onion, diced

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1 teaspoon red pepper flakes (adjust to taste)

4 cups chicken broth (low sodium)

1 cup heavy cream

2 cups kale, chopped

1 cup cherry tomatoes, halved

1/2 cup grated Parmesan cheese (plus more for serving)

Salt and pepper to taste

Olive oil for sautéing

Instructions
 

Sauté the Sausage: Set your Instant Pot to the “Sauté” mode. Add a drizzle of olive oil and allow it to heat. Add the Italian sausage and cook until browned, breaking it up with a wooden spoon, about 5-7 minutes. Remove and set aside.

    Cook the Aromatics: In the same pot, add the diced onion and sauté for 3-4 minutes until translucent. Stir in the minced garlic, oregano, basil, and red pepper flakes; cook for an additional 1-2 minutes until fragrant.

      Combine Ingredients: Add the cooked sausage back into the pot. Pour in the chicken broth, mixing well to combine all the ingredients. Press “Cancel” to stop the sauté function.

        Pressure Cook: Close the lid of the Instant Pot, making sure the valve is set to “Sealing.” Select the “Soup” or “Manual” function and set the timer for 15 minutes.

          Release Pressure: When the cooking time is up, allow the Instant Pot to naturally release pressure for 5 minutes, then do a quick release for any remaining pressure.

            Add Cream and Greens: Open the lid and stir in the heavy cream, chopped kale, cherry tomatoes, and grated Parmesan cheese. If desired, season with salt and pepper to taste. Set the Instant Pot to “Sauté” again for a few minutes to allow the kale to wilt.

              Serve It Up: Spoon the soup into bowls, and sprinkle additional Parmesan cheese on top, if desired. Enjoy your savory, creamy Keto Tuscan Soup!
